The Atlas Mountains are in Morocco. Wild thyme grows there. Pipers is asking you to imagine North African hillsides while eating crisps in Britain. The romance is appealing even if the actual flavouring probably came from somewhere more prosaic.

The herbs are prominent. Thyme provides earthy, almost medicinal aromatics. Rosemary adds pine and pepper. Together they create something that tastes like roast lamb accompaniment, like Mediterranean cooking, like Sunday dinner herbs without the Sunday dinner.
