They taste like roast potatoes, specifically. Crispy edges, fluffy insides, goose fat or dripping, rosemary and garlic.
That’s a flavour worth capturing.
Co-op captures it remarkably well. There’s a roasted quality, that Maillard reaction depth that roasting produces. There’s fat richness, something approaching the dripping experience. There’s herb presence, rosemary predominantly.
